In Search of Wild Edibles
These are Ramps. The sweet garlicy onions of the forest. Today I went for a hike up the pasture behind the farm to the woods and found my first ramps. They cover the forest floor. Their lush leaves are easy to spot and they are a tasty bit of wild spring.
Tell me more about how I should eat ramps. Do you eat them raw? Cook them? Steam them? Fry them? Serve them with lentils and kale? Please tell me more!
Dad, you can eat them just like scallions:) the leaves are exceptionally tasty...I love them raw...but for those who don't like onions, you can saute them...you and mom should go for a hike and see if the hills of PA will provide
Katie, I have been missing you a lot... we need to find a time to talk. It sounds like your time is very rich with learning. I hope your soul and body are content with this experiment. I am heading for a farmer's market tomorrow and will look for ramps!

Katie, my mom would be thrilled! West Virginians love ramps!
